What types of dough can I roll with the dough sheeter? Dough sheeters are most commonly used for laminated doughs such as croissants, Danish, and puff pastry. However, they can also be used for many other types of dough, such as cookie dough, pâte sucrée, pâte brisée, cracker dough, and even fondant and gum paste.
How much space do I need for the compact 30cm dough sheeter? When assembled, the machine measures approximately 82.5 cm L x 41 cm W x 20 cm H. Additional space for the movement of the rolling board is required on both sides. When the board is fully extended to one side, an additional 15 cm of space is needed.

The board measures 70 cm long x 30 cm wide. In our experience, a batch of croissant dough made with 300 g of flour is near the maximum capacity (with the butter block and dough block together about 675 g total).
Can the rolling board be folded for storage? The rolling boards cannot be folded for storage. However, the boards are slim, lightweight, and easy to store when not in use.
RS201
Larger than RS101, RS201 offers enhanced capabilities while maintaining a compact footprint. Its foldable design ensures it occupies minimal kitchen space, making it an ideal choice for both home bakers and professional bakery owners seeking to elevate their baking efficiency and quality without investing in a large commercial sheeter.
